Breakfast for my Boys!

Today is the 1st day of my boys lil vacation for Thanksgiving week! So they let me know ahead of time they wanted me to make them some tortillas, and chorizo, eggs and potatoes. mmm mmm love making my boys tummys happy.

My Tortilla reciepe:
about 4 cups of all purpose flour
open your hand and pour some salt in the lil bowl part of your palm this might be a 1/2 tbsp. I use 2 of these. Then 2 pinches of baking powder.
2 good hand fulls of shortening or Lard (your preference).
Mix the dry ingredients real good, then add the shortening and mix this in real well now add some water. I have never measured how much and this will be a guess but i think about 1/2 a cup kneed the dough till you have it looks like bread dough. But you might need to add more water if during your mixing if you notice it still real dry or lumpy. Not to much if you do just add some more flour and mix together. I then make sure that my dough has some elaticity to it. place it in a container with a lid for about 30 minutes or more to rest.  There you have it you are ready to roll them out i make lil golf ball size balls then take them and make them flat. I put a lil flour down in my clean area. Also rub some flour on your rolling pin. You place your flat ball down use your rolling pin to roll it out. This will take practice to roll perfect round tortillas. I had a few that came out like shape of Texas but hey I live in Texas what can I say. You should also have your griddle on at this time I would say at medium heat. take your rolled out dough place on the griddle, watch for bubbling, when you notice this then its time to flip it over and cook for a few minutes on that side. Have a sheet of foil ready and place in the foil and repeat for as many as you need. This receipe makes about 2 doz or a lil more. Have fun and when you put love into what your cooking it will show. So Cook up some love!
